Acorn Squash & Rice Croquettes
This is a variation of rice and potatoes croquettes. It turned out to be very yummy, and not only is very quick, but it makes a great presentation on your table. These types of croquettes, and any other type of croquettes are super, to take to a party and have a different dish to share.

Ingredients
2 cups of cooked rice
1 small acorn squash, cooked and mashed
1 teaspoon salt
1/4 teaspoon pepper
1 egg
1/2 cup Parmesan cheese
1 cup of flour, or as needed
2 cups oil or more
Preparation
Mix well first ingredients. Form croquettes with about 1 tablespoon of mixture. Dip croquettes into flour. Press well and fry in hot oil until golden brown.
