Black Bean Soup

Ingredients
1/4 cup olive oil
1 medium onion
2 cloves of garlic, minced
4 slices of bacon, chopped
3 cans of black beans
1 cup of chicken broth
4 cups of water
1 Tbsp. cumin
Salt and pepper
Preparation
Sauté vegetables in olive oil in a large pan at medium heat; add beacon and stir until crispy. Add chicken broth, black beans and water. Simmer for 20', add salt, pepper and cumin. After another 20' mash the beans, with a fork, until the mixture is well blended and it looks creamy. Serve hot and garnish with sour cream and green onion. I LOVE black bean soup- this one looks delicious with the addition of bacon. Do you add the bean juice from the can or drain it? Is this an recipe from Argentina? ;)
ResponderBorrarI add the bean juice from the can. No, this recipe is not from Argentina. I learned to eat black beans and add it to most of my recipes, when I lived in Texas. We LOVE black beans in our home. I write classic recipes and I try to shake them up a little, and see what happens! We love this soup, we like to crisp the bacon really good before adding the liquids. Ah! THANK YOU SO MUCH for the dulce de leche, it was YUMMY!
