Alfajores de Maizena (Cornstarch Pastry)
Alfajores de Maizena!! There are many recipes of this delicious treat so unique in Argentina and Uruguay. The experience, eating this treat, is exquisite! People sell them on the streets, bakery shops, families bake them in homes and it is, surely shared between friends! This recipe is one of my favorites, I like to bake alfajores. It is definitely a long process, but it is worth it! Try it, you will not regret it! Trust me.

Ingredients
1 2/3 cups flour2 1/2 cups cornstarch
1/2 tsp.baking soda
Zest of 1 lemon
2 tsp. baking powder
1 cup butter
3/4 cups sugar
3 yolks
1 tsp. vanilla
Dulce de Leche
3 cups of coconut flakes
Preparation
Mix together and set aside: flour, cornstarch, baking soda and baking powder. Separately whip until fluffy: butter and sugar and dd vanilla and lemon zest. Combine the two mixtures and add the egg yolks, one at a time. Knit the though, until soft; chill it for at least 4 hours. When ready, spread the dough on a floured surface of 1/2 inch thick, cut circles of 4 or 5 inches and place cookies on a greased cookie sheet and bake at 350F for 17 minutes. Let the cookies cool completely, then place a generous dollop of dulce de leche on one cookie, topping with another cookie to make a sandwich. Press gently together. Cover in sifted powdered sugar or roll the edges in coconut, if desired.Makes 3 dozens.
Another way of making Dulce deleche: Boil a can of condensed milk for 4 hours in a pan. Make sure the can is always submerged in the water while boiling. Let cool completely before opening the can.
