I tried this recipe today and I loved it! I usually use a piece of meat like this one in the Crock pot or in soups. Today I wanted to try it in the oven. I am always afraid that the meat will dry too much and my family would not be happy. But, this recipe was a success. I am very happy with it I hope you enjoy it to.

Ingredients
1 onion
6 red potatoes
1 red pepper
Garlic
Celery
2 pounds round roast
Salt
Pepper
Rosemary
Garlic powder
Olive oil
Directions
Preheat oven at 474F. Wash and roughly cut the vegetables, place them into a large roasting pan and drizzle them with olive oil. Season meat, rubbing it really good with oil, salt, garlic powder, pepper, and rosemary. Place it on top of the vegetables; take it the oven and inmediately, turn the heat down to 400F. Cook for 1 hour. Take it out of the oven, cover the pan with tin foil and let it stand for half hour. Adapted from http://www.jamieoliver.com/
