Parsley Red Potatoes

In my family we eat a lot of potatoes. We make sure we have potatoes almost on every meal. This recipe was adapted from my father in-law. My husband used to love, when his dad, made potatoes with oil during his childhood in Utah. The reality is that today I did not have regular potatoes, I found  red potatoes, so have decided to give it a name to my mixture and enjoy it with my family; Parsley Red Potatoes

Ingredients
2 pounds of small red potatoes
1 cup parsley (preferably fresh)
Olive oil, salt & pepper to taste

Preparation
Before you start washing the potatoes, fill 3/4 of a large pot with water, bring it to boil. Meanwhile wash the potatoes, do not peel them nor cut them. When the water is ready place the vegetable into the pot for about 10 minutes, or until tender. When the potatoes are ready, and while warm, cut them in cubes and place them into a salad bowl. Add the parsley, and season the salad with olive oil, salt and pepper. This makes a great side dish!
