Fall Harvest Soup

En Portugal


Fall and wintry days are my types of days. I enjoy Autumn very much, I like the colors around us during this time, and the smell of hearty meals being prepared in the homes, lift up my heart; soup especially. I remember during this time of the year we always had soup at home, I remember how I disliked having soup everyday, but as grow older I learn to love soup more and more. It actually brings me good memories. My dad really likes soup, he always did. My Nonna (grandma) used to make soup almost everyday; and now, in our home, during this time of the year we surely appreciate a good, nice and warm bowl of soup.

Ingredients
6 slides of bacon chopped
1 cup chopped onion
2 cups of whole kernel corn
4 cups of chicken broth
3 cups of potatoes, cut into cubes
1 cup of green beans
1 cup of carrots, finally chopped
1 cup small broccoli florets
1 small buttersquash, peeled and cut into cubes
Salt and pepper to taste

Preparation
Heat a large soup pot over medium-high heat. Add bacon and cook until crisp.  Remove bacon and place on paper towels to drain reserving about 1 tablespoon of bacon drippings in soup pot. Heat drippings over medium-high heat. Add onion ans cook until until it is transparent. Add corn with juice and chicken broth; stir to combine. Bring soup mixture to a boil and reduce heat to medium-low heat. Cover and cook for 10 minutes. Add vegetables and cook for 10 minutes more over medium-low heat. Before serving, add baked cooked bacon. Makes 6 servings
